This massive book is one of the most useful I’ve found. If the niceties of regulating several fires on the hearth at one time challenged the skill of the cook, even more difficult was the proper regulation of the oven. This book is truly traditional, in that it doesn't cover canning or freezing, unlike most other books on the market about preserving food.
